How to Make Steamed Dhokla

Preparation Time :- 5 minutes

Cooking Time : - 15 minutes

Serves :- 4 servings

Ingredients:

FOR BATTER

  • 1 cup of Gram Flour / Besan
  • 1 tbsp of Semolina /sooji
  • 1½ teaspoons of Lemon juice
  • 1 teaspoon of Eno Fruit Salt
  • 1 teaspoon of hardly crushed Chilli and Ginger
  • 3/4 cup of Water
  • 1/4 cup of Curd
  • 1  teaspoon of Oil
  • 1/2  teaspoon of Salt as per taste

FOR TEMPERING

  • 2 tbsps of Oil
  • 10-15 Curry Leaves
  • 1/2 teaspoon of Mustard Seeds
  • 1/2 teaspoon of Cumin Seeds
  • 1 teaspoon of Sesame Seeds / til
  • 1 tbsp of Sugar
  • 4 Green Chillies: slit  them lengthwise & cut into halves
  • 2 tbsps of chopped Coriander Leaves
  • 2 tbsps of grated Fresh Coconut
  • 1 pinch of hing
  • 1/3 cup of Water

Directions For Batter and Khaman Dhokla:

1) first take all ingredients for  preparation of batter. Now Pour approximately . 2 to 3 cups of water in steamer at bottom and then heat it over a medium flame. Always  make sure that steamer is at least 4 to 5 minutes heated before placing the plate in it. Then Grease 2 small plates (4 to 5 inch in diameter) using 1-tsp of oil.

2) secondly take gram or besan  flour, semolina , green chilli-ginger paste, , lemon juice, curd, 3/4 cup water and salt in bowl. Now Mix them very properly into smooth batter. Every time make sure that ,there are no lumps left.

3) Add fruit salt into the batter and then stir it in one direction for approximately one minute. Then you will notice that its size would increase to almost double of its orignal.

4) Pour the batter immediately into each greased plate and then fill it upto half inch of thickness.

5) now, Place the plates in steamer and then steam it for 10 to 12 min over the medium flame.

6) After 10 to12 min, now insert a knife or toothpick into the dhokla and check if it comes out cleanly . and If it does not, then only it is ready otherwise cook it for 2 to 3 min more.

7) finally take out the plates from steamer and let them cool it for few min. And Cut the fluffy khaman dhokla into small squares using the knife.

Directions for Tempering:

1) First heat 2 tbsps of oil in a small pan. Then Add mustard seeds and asafoetida in it. When the seeds begin to crackle, then add cumin seeds, curry leaves , sesame seeds, and green chillies, then saute them for some sec.

2) Now ,add 1/3 cup of water & sugar and then bring it to boil ; let it cook for a min over the high flame. Here tempering is ready, now pour it over the dhoklas and toss it gently until each dhokla is coated well with the tempering.

3. Finally garnish with the chopped coriander leaves & grated coconut and also serve it with coriander chutney.

How to Make Dhokla in a Pressure Cooker:

1) First Pour the water 1.5 to 2 glass water into 5 lit capacity aluminium or steel pressure cooker and heat it over medium the flame for 4 to 5 min before placing the greas plates.

2) Now Place small stand / small bowl in the pressure cooker & place greased plates over it. As per your convenience you can also use the dhokla stand in pressure cooker.

3) Nextly Close the pressure cooker lid & remove the whistle. then Cook it over the medium flame for 15 min. 15 min later open the lid and then insert the toothpick to check whether dhokla is cooked or not. If it is not then cook it more for 5 min.

4) If you are making it in the large quantity then do not forget to add the water in pressure cooker in each batch

How to Make Dhokla Recipe in a Microwave:

1) Firstl keep the batter aside for 10 min and let it settle in step-2 as in above recipe (ie, before adding eno  salt).

2) After 10 min, grease a microwave safe bowl with the oil & pour the batter in it.

3) Now Cover it with the lid or a plate & cook on high settings for 2.5 to 3 min.

4) After 2.5-minutes, remove the bowl from microwave & insert toothpick in the center to check that it is cooked or not. And If it comes out clean then it is cooked otherwise cook it more for 20 to 30 sec.

5) But If you over cook them then they may turn so hard then  make sure that if you required to cook for more time, then check them after every 30 seconds.
