How to make Veg Schezwan Noodles

firstly, i want to tell you that you can make these schezwan noodle with any choice of noodles variations . but i would mostly recommend using hakka noodles as compared to others like rice noodles.

secondly, if you are using schezwan sauce bought from store, first inspect the spice level before using it in the recipe.

Because each sauce has it own variations in the spice level & you may have to adjust its quantity accordingly.

finally, once the cooked noodles are added to the pan, then do not over mix it. be very gentle and use fork or spoon to mix it in a very high flame.

How to make schezwan noodle recipe

This is a Chinese recipe . and their method of prepairation is different . schezwan chicken noodles they make very differently and Indian version different.

INGREDIENTS

FOR BOILING NOODLES:

  1. 1 tsp of oil
  2. 250 grams of noodles
  3. 6 cups water
  4. 1 tsp salt

1. boil enough water in a pot or pan with some salt and a few drops of oil.

2. Add the noodles in the hot boiling water.

3. No need to break the noodles. At least I don’t break the noodles. I have used hakka noodles here, but you can use any good quality noodles.

4. cook the hakka noodles according to the package instructions.

5. When the noodles are just about cooked, meaning al dente, its time to strain them.

6. Strain the noodles in a colander.

7. rinse the noodles in running water very well. This method stops the cooking process and removes the starch.

8. Add oil to noodles.

9. toss the noodles gently, so that the oil gets coated evenly on the noodles. This method gets rid of stickiness from the noodles.

Keep aside covered and let the noodles cool completely before you add them to the stir fried veggies.

FOR SCHEZWAN NOODLES:

  1. ½ onion finely chopped
  2. ½ carrot which is chopped
  3. 4 tbsp cabbage shredded
  4. 2 tbsp of olive oil
  5. 3 clove of garlic which is finely chopped
  6. 4 tbsp of spring onion which is chopped
  7. 4 beans which is chopped
  8. ½ chopped capsicum 
  9. 2 tbsp schezwan sauce
  10. ½ tsp of salt as per taste

INSTRUCTIONS

1. in a large kadai heat 2 tbsp of olive oil in a pan & saute 3 clove garlic and 2 tbsp of spring onion.

2. Saute ½ onion on a high flame.

3. Further add half carrot, 4 beans ,4 tbsp cabbage and half capsicum.

4. Stir it and fry on high flame without overcooking the vegetables.

5. Now add 2 tbsp schezwan sauce & ½ tsp salt. Not only shops sauce ,but you can also use homemade schezwan sauce / schezwan chutney.

6. stir fry it for a minute making sure that sauce is well combined.

7. further, add in the cooked noodles and stir fry on high flame.

8. mix all noodles until the sauce is well combined with it.

9. finally, add the spring onions and enjoy the tasty schezwan noodles.

Ingredients

for cooking noodles

  • 150 grams hakka noodles or plain noodles or 1 pack of noodles
  • 5 cups of water to cook noodles
  • 1 to 2 teaspoon oil to coat the noodles
  • 2 to 3 drops of oil to be added while heating water.

other ingredients for schezwan noodles

  • 1.5 to 2 cups finely chopped vegetables (a mix of carrots. beans, cabbage, mushrooms, capsicum/green bell pepper)
  • 2 to 3 small spring onions or 1-2 medium spring onions or 1/4 cup spring onions – finely chopped, reserve the greens for garnish
  • 3 4  garlic finely chopped
  • 1 tbsp schezwan sauce, you can add more for a more spicy taste
  • ¼ to ½  teaspoon black pepper powder or as required
  • 1 tbsp rice vinegar or regular white vinegar or apple cider vinegar
  • 1 to 1.5 tablespoon of spring onion greens
  • 1 tbsp  oil for stir frying
  • salt as required

Instructions

  • Boil 5 cups of water in a pot or pan with some salt and a few drops of oil.
  • Add the noodles in the hot boiling water.
  • Cook the noodles according to the package instructions.

  • Add the french beans. Keep on stir frying on high flame for about 3 to 4 minutes.
  • Add the remaining veggies – finely chopped carrots, capsicum (green bell pepper), mushrooms. Keep on stir frying the veggies on the high flame.
  • Stir fry for about 7 to 8 minutes till the edges of the veggies start to slightly brown. You can cut down on the stir frying time, if you prefer half cooked or more crunchy veggies.
